The Best Damn Pancakes

These are not protein pancakes. These are not in anyway made to “fit your macros”. They are just the best damn pancakes ever. In my opinion (and my kids), anyways.


Six months ago I went on a pancake kick trying to come up with the best damn pancake recipe.


I don’t like super thick pancakes, and all the recipes were giving me really thick and chewy pancakes.


After many trials and tribulations I finally got my recipe down pat.


Dry Ingredients:

300g flour

75g of sugar

4 tsp/15g baking powder.

1/4 tsp/1g baking soda

1/2 tsp/4g table salt


Wet ingredients:

600g milk

60g  melted butter

2.5-3 tbsp vanilla extract

1 egg


Instructions:


  1. Add all dry ingredients to bowl and mix together.

  2. Add 200g milk and the egg to a separate bowl and whisk to mix up the egg.

  3. Add egg/milk mixture and remaining wet ingredients to the dry ingredients. EXCEPT melted butter.

  4. Mix wet and dry ingredients together and then add warm melted butter in last.

  5. Let sit for 5 mins before adding to griddle/pan.


This makes about 17-20 small pancakes depending on the size of them.


If you like your pancakes a little thicker, use less milk.


Add frozen berries, fruit, or chocolate chips to the pancakes when they are on the griddle.


Macros below are for a single 1/4 cup of the mixture poured out as a pancake:
